The “Maku team” is in charge of cultivating cotton and growing rice and vegetables. The “Kuu team” cooks plenty of nutritious meals for the staff. These two teams combined are known as the “Minoru team”. We could see a different side of them from the creation factory or the shop.This is the latter half of the interview covering staff in charge of “farming” and “meals”.

—— Well, “Minoru team”, please tell me about your motivations and hopes for the future or challenges.


Nasu
I am supporting and helping with what they do for the vegetables. We are renting vast areas for rice and vegetables, and the weeds are out of hand.


—— I can understand that.


Nasu
Especially the wild millets that are growing on the steep slopes. They thrive on the rice field banks, which are 45 degrees slopes in most places in Japan. You hardly walk there.


—— That must be hard.


Nasu
There are four main 45 degrees slope spots, and you have to cut them every so often. Ms Fukumori orders us to plough the fields by tractor or help with what she asks us. We never get to the fields during summer, but work on the slopes to get rid of weeds, which grow faster than we have to redo cutting again when we finish it one around.


Fukumori
I mainly ask them to get rid of weeds and plough with a tractor.


Nasu
This year, since we couldn’t catch up with the weeds, they bought us a cutting machine hooked up to a tractor. We can cut the surface of the side banks and the weeds around the cotton fields by tractor, but we still have to cut them with hand cutter on the 45-degree slopes.


—— There’s so much to do to control the weeds.


Nasu
We don’t cover the side ridges of cotton or vegetables with plastic sheets.


—— You dare not do it, right?


Nasu
We don’t want to do it. We only do it for onions.


—— Why is that? They surely had weeds on the side ridges.


Nasu
If we cover them with plastic sheets, sweet potatoes lose their flavour. We also need to pull weeds around the cotton until they grow a little larger.


—— How about you, Ms Fukumori? What gives you difficulties?


Fukumori
Well, it’s been a year since I started making vegetables in the fields. I had never done it before, and have gained real experience for the first time. We have learned to plant the same vegetable seeds in Spring and Fall. If we fail to grow them in spring, we can try them again in Fall, or if we did an excellent job in spring, we might not do well in Fall.


—— You have been learning due to trial and error, right?


Fukumori
Last year, we had many bugs in the Chinese cabbages. Even though we removed the bugs, eggs hatched again, which became endless. The bugs ate many leaves, and that made cabbages look bad. (bitter smiles)


Nasu
We are looking forward to harvesting potatoes in November, which we planted in the summer. They must be tasty.


—— I see. Well, would you tell me how you would like to develop the farm from now on?


Fukumori
Well, last spring before the Corona pandemic, we discussed with the “Kuu team” about seeds or expectations of what we needed to prepare. Having more customers come to eat and offer them tastier-looking meals, we made more colourful or different veggies. Now, the customers cannot come, but we work to please the staff to enjoy meals because they have a hard time working. We are glad if we could provide them with some excitement with their meals. For me, it is not just providing meals; it is more like offering entertainment. ( laugh )


—— That sounds great!


Fukumori
I want them to feel happy or be excited by enjoying different types of vegetables, which is my motivation to make vegetables.


—— There are attractive, unusually coloured carrots or tomatoes or vegetables.


Fukumori
Yes, there are. We made purple carrots, too.


—— Did you make purple potatoes?


Fukumori
Yes, we did. They haven’t cooked them yet, but I am looking forward to it. ( laugh )


—— I see. How about you, Mr Nasu?


Nasu
We have been doing what Ms Fukumori asks us because growing cotton is our duty. I want to try natural rice cultivation. As far as the area we have, I think we could make more than 1000 kg. One of the strategies I have is… do you know rice stubbles left after cutting rice plants?


—— Yes, I do.


Nasu
We cut them all by a tractor, and after that two of us ploughed thinly and planted milk vetch seeds on all the rice fields. They will bloom in spring and fall seeds. After the milk vetch flowers die, we plough them thinly by a tractor…I think that’s an effective way.


—— That is how you make the rice field foundation.


Nasu
We planted a lot of milk vetch seeds, and they are germinating now.


—— It is the so-called green manure. Because it is natural cultivation.


Nasu
I think we have to have such a method. This year we had tons of rush in the Nakahata rice field district, and they grew a lot. We cut them all with small cutter machines. We had many problems to overcome, but we hope we could get 1 ton of harvest for the next year.


Fukumori
Yeah.


Nasu
We feel terrible not to get a fair amount of harvest.


—— Are you taking care of staff meals with the present crop harvest?


Nasu
We could take care of ourselves with the last year’s leftover and this year’s harvest.


—— You run it self-sufficiently.


Nasu
We may have a shortage after the pandemic is over when our customers come back to eat.


—— I see. You have to consider it.


Nasu
Our rice is such a treat for you. Because it is made through natural cultivation.


—— Yes, it is! How do you feel cooking with such rice, Ms Ooishi?


Oishi
Cooking? I did plant rice seedlings and produced good rice, I feel…


—— Oh, yeah, I forgot you did rice-planting.


Oishi
I indeed did, that’s because…( laugh )


Fukumori
( laugh )


Oishi
I feel wasteful if I spilled a little bit of rice because planting was such hard work, that’s why I feel so strongly about it.


—— Wow, that is a good lesson. You worked by the sweat of your brow.


Nasu
It was so much fun to work with everyone to plant.


—— That sounds like so much fun.


Nasu
Before rice-reaping this year, we found many wild millets in the rice fields, and knew they were out of our hands. We asked everyone to come to help us in the early morning.


Fukumori
We worked to remove them.


—— In those cases, you could use the workforce.


Nasu
We were completely wet, but made it in removing them all. We did and collected them.


—— That was such a good experience for you.


Nasu
Who do you think would eat those wild millets?


—— Who eats them?


Nasu
Silkie Chicken ate them.


Fukumori
I am glad there is someone to eat them.


—— A virtuous cycle! They make it work well.


Fukumori
( laugh )


Nasu
The boss asked me to bring them all without throwing any away. The Silkie Chickens were so happy to eat them. They also eat broken rice from husking.


—— That is awesome to make use of them all. Well, we keep on moving to ask the “Kuu team”. Ms Ooishi, would you tell me about your hopes going forward?


Oishi
We have been closing the cafeteria, but we want to get ready for the day we reopen. We want to try new things for not making them disappointed, and I need to study more.


—— Ms Oishi, you haven’t experienced offering the meals to the customers yet, right?


Oishi
No, I haven’t. I want to take advantage of this break now and do what I could to learn.


—— You have a plan to reopen the “tabe room” (*cafeteria), don’t you? I am looking forward to it. I will surely come to eat your delicious meals.


Oishi
Please do.


—— How about you, Ms Kamiyashiki?


Kamiyashiki
I have been learning my tasks now, but I want to do well without anyone’s help soon.


—— Do you have any ideas about having wild game meat dishes?


Kamiyashiki
If they ever use them for cooking, I would like to have the opportunity. ( laugh )


—— I see. ( laugh )


Kamiyashiki
I want to cook them. The boss gave me a book about wild game. I am studying it now.

After finishing the interviews with everyone, including the new member, Ms Kamiyashiki, Ms Hatsuko Sakai, who is loved by all the staff and called “okaasan” (*mom) arrived. We took time to have a cup of tea and chat with her about who is the oldest staff and knows “tamaki niime” since the beginning. —— Are you the oldest staff member in “tamaki niime”?


Hatsuko
Yes, I am.


—— You used to work at the shop before, right?


Hatsuko
I did most of the work, except for sewing. I did the washing and weaving a little, but I quit because I cannot see the tiny threads any more. I wanted to try everything, though.


—— You have a positive mind and spirit. There were only 3 of you, Ms Tamaki, Mr Sakai and you at first.


Hatsuko
That’s right, that’s right.


—— You have been here in Nishiwaki since they opened “tamaki niime”, right?


Hatsuko
Yes, they decided to open in Nishiwaki, and I helped in the shop because Ms Tamaki couldn’t do her tasks if she worked in the shop.


—— That must have been difficult to do both creation and sales.


Hatsuko
Yes, it was. We didn’t have the weaving machines yet and made various products using the materials from Mr Nishikado, the Banshu-ori craftsman. First, I worked to sell them with Mr Sakai, and we made our sale’s goal every. We had such time and 13 years since I was 53 years old. I think back to how I was able to move here and did all the work.


—— Did you move to the meals section after they moved here?


Hatsuko
No, I started making meals a little before they moved to Ueno when Ms Tamaki had the very first but smaller Shop & Lab named “589” just off the central business district in Nishiwaki. She bought the power loom and started herself weaving. Her staff worked late, and she worried about their health, that’s why she asked me to fix meals for them.


—— Oh, is that so?


Hatsuko
Yes, after they moved to Ueno, Ms Tamaki had the kitchen built, and I worked by making the staff meals and also worked in the shop. I had to feed the staff working in rotation. That’s why I had to work at the shop, replacing them at that time. After preparing for meals, I went to the shop and returned to the kitchen to clean up.


—— I see.


Hatsuko
I didn’t have time to make friends. I just worked so hard every day, but I think I was enjoying my life.


—— During those days, you moved here to the present building and had the “tabe room” to share with customers.


Hatsuko
Yes, we did. First, the “tabe room” was used only by us, but they came up with the idea to share the room with customers. Around that time, Ms Tamaki became a vegan, and she ate only vegetables. Our staff were pleased with vegan meals, and they suggested that we provide vegan meals to the customers. We started making vegetables on the farm, that’s how we are at present.


—— I am growing vegetables, so I understand how tough it is to take care of the fields


Hatsuko
Two of them are working very hard. I appreciate them so much that they grow delicious vegetables.


—— I am looking forward to reopening the “tabe room”.


Hatsuko
I wonder how things go after the pandemic is over…considering the place and more. We will see how the boss takes care of them.


—— Well, she will get inspired and get bright ideas.


Hatsuko
That’s right.


—— Yes, she ponders deeply and will choose the best ways. She will always be like that.


Hatsuko
I think so, too. The only thing I could do is supporting the staff.


—— You are the central person giving them comfort and meals.


Hatsuko
Thank you very much. I just want the staff to be healthy and to look forward to having lunch. I want to see their excitement and smiles, which motivates me to cook for them. And, of course, I love cooking.


—— I see.


Hatsuko
So, that’s my only wish and purpose for cooking. That’s why I have been enjoying cooking, and I wish to be their comfort.


—— I see.


Hatsuko
I have been trying to cook meals to make everyone happy and enjoy eating. I think all I want is to be satisfied with making delicious meals even though we have some trouble because we make mistakes.


—— I see your creative and variety of menus. How did you get those recipes?


Hatsuko
They are my inspirations.


—— They are lovely!


Hatsuko
I certainly read cooking books, because I love them. When I come to the ideas, I get the hints from books, and work in my inspirations and try one way or another.


—— You work with your experiences, inspirations, and sense of cooking.


Hatsuko
I think so. We have young people in the kitchen now, and they are serious about learning. It is always hard to teach them. It depends on how well they get a sense of cooking. Some are quick to learn, but some take time to catch on.


—— I understand. Getting a sense for cooking depends on the person.


Hatsuko
I hope they catch on and make it belong to them.


—— Mr Sakai came back from outside.


Sakai
Mom, you didn’t make it for the interview.


—— Yes, she made it.


Sakai
Oh, are you interviewing her now?


—— Yes, we are having a magazine-style interview. ( laugh )


Hatsuko
That’s right.


—— Her story makes me feel warm.


Sakai
Wow, that’s great! ( laugh )


—— She has known you and Ms Tamaki since the three of you started together.


Sakai
Yes, she has.


—— So I have been listening to her story with much interest. ( laugh )


Hatsuko
( laugh ) Sakai and Tamaki have influenced me and pushed me to work harder. I saw them moving forward, which made me think about what I could do. Because of them working hard, I could make an effort to keep working hard.


—— You have been supporting them while you are working.


Hatsuko
I may have given them trouble. I can’t say what I did was “support”. I have been just what I am. I can’t change that.


—— That’s true. We can’t be anyone besides ourselves.


Hatsuko
I think so.


—— We have many faults, but shouldn’t deny ourselves.


Hatsuko
You are right. You are who you are. Now I hand it over to Ms Ooishi and want her to learn to utilize the many flavours of others and grow by herself. I am glad we have a new member, Ms Kamiyashiki, and hope she learns with her one on one. Over time you won’t need my help, and it is ideal for me to retire.


—— I hope you sometimes come to visit them even after they learn to stand on their own feet.


Hatsuko
Oh, I have forgotten to tell you. I am in charge of Saturday and Sunday because the other staff are off, and I do all by myself.


—— Is that so?


Hatsuko
The other day, “tamaki niime” allowed the “Kuu team” to go to the old restaurant at Kawaramachi in Kyoto. The soup was so good. I hope to remake the same taste.


—— That’s an excellent training chance for the “Kuu team” to learn.


Hatsuko
The boss has given us such opportunities. I hope we could get something that is our own.


—— Do you have your secret recipes?


Hatsuko
They are the ones I was doing a long time ago.


—— Those are mother’s secret recipes.


Hatsuko
When Ms Tamaki became a vegan, Mr Sakai told me that I only need to cook what I cooked a long time ago. Since we were farmers, we were eating a lot of vegetables. That’s why once I cooked so many vegetable dishes.


—— I see.


Hatsuko
So, I have been cooking such dishes adding some changes and some meat I could recently use. On my menus; I have “curry rice” and “pork cutlet” which I used to cook for my children. And “sauce cutlet”, which is one of the menus in Fukui. I tried to remake them at home for those I enjoyed eating in the past, or my children liked. I repeated them many times until I could approve of them myself.


—— You redo repeatedly.


Hatsuko
Yes, I could permit myself when my family is satisfied at last.


—— I see.


Hatsuko
I am using the same process that I use at home.


—— They are the most comforting dishes.


Hatsuko
I believe so. Home dishes make you feel so good and comfortable.


—— I agree with you. Ordinary meals make you feel relaxed.


Hatsuko
Yes, you can eat them without any pressure. I believe that the meals that make you feel easy are always so delicious for you.


—— I think so. They are simple and enjoyable for everyone because you can feel free.


Hatsuko
I feel the dishes with fresh vegetables are the best of all.


—— I think people eating such dishes feel frank and honest. Thank you very much.


Hatsuko
My pleasure. “Mom, it was great” is the best compliment for me.
